I Tried Billie Eilish's Favorite Vegan Cookies

I have recently made the decision to cut gluten and dairy out of my diet. My stomach is extremely sensitive and it took me over our winter break away from college to realize that I needed to change something. Although I am getting used to it, this is definitely not easy. I have an extreme sweet tooth, so finding dessert recipes I could eat was essential. I stumbled upon Billie Eilish's favorite cookie recipe that was published in Women's Health Magazine. The recipe is relatively simple and includes:

Ingredients:

1 cup brown sugar

1 cup peanut butter

2 teaspoons vanilla extract

1 cup oat flour or a gluten-free substitute 

1 teaspoon baking soda

1/8 teaspoon salt

1/4 almond milk or a milk substitute 

Vegan chocolate chips 

 

Directions:

Preheat the oven to 350 degrees

 Mix the brown sugar and peanut butter together in a mixing bowl. Add the vanilla extract to it and mix. In a separate bowl, mix the oat flour, baking soda, and salt. 

Mix all wet and dry ingredients. Add the almond milk and chocolate chips. Lastly, place the mixture onto a baking sheet and place it in the oven. Cook for 10 to 12 minutes. 


Every dessert recipe that I have made so far has.. let's say… not been great. This recipe though, I will make constantly. My roommates, who don’t subject themselves to the gluten-free and vegan lifestyle, even loved them! I couldn't stop eating these cookies because they are just that good. Please try and enjoy!
